Courgette & Sundried Tomato Muffins

The quiet star of the Summer – our grab and go savoury muffins made from shredded courgette, organic sundried tomatoes, spelt flour and olive oil. Great heated up with some summer veg, plated up with a salad (instead of a quiche) or just eaten out of the hand when you’re in a rush and want something super-quick (but not super-processed or dirty). A kind of 2018 vegan reincarnation of a pork pie or quiche or pastie, but without the pastry. Hits the spot for a lot of people this one.
