I apologize for writing to you guys directly but I couldn't see how to just leave a message on your website.
I have just learned that you are closing down your bakery. I can't believe it. I visited your website just to know how you were doing, because after having left Cardiff (and the UK) more than one year ago, I still miss your delicious bread. I am from Italy and, sure, I was used to good breads but yours were so superior… I mean, before Tortoise Bakery, I had never seen a bakery offering a sourdough bread with a 44 hours fermentation.
My understanding is that you will open a new bakery somewhere else. I wish you guys the best of luck because you deserve it and because the bread world needs you.
